Broccoli, Carrot, & Sweet Potato Roast

4 carrots, peeled and cut into 1 inch pieces

2 sweet potatoes, peeled and cut into 1 inch pieces

2 crowns of broccoli, trimmed into 1-2″ florets

2 tbsp Olive Oil

½ tsp Coarse Salt

½ dried rosemary

Preheat over to 450F.

Toss vegetables with olive oil in a large mixing bowl; season with salt and rosemary.

Roast at 450F for 15 minutes.

Toss veggies, then roast for additional 15 minutes or until the sweet potatoes can easily be pierced with a fork.
