Summer Slaw

Summer Slaw
For the Dressing:

4 tb olive oil
2 tb plain Greek yogurt
3 tsp honey
2 tsp hot sauce (or more if you like spicy things)
1/2 cup cilantro leaves
Juice from 1 ripe lime (1 large or 2 small)
1/4 tsp sea salt + 1/2 tsp pepper

For the Slaw:

4 cups shredded cabbage
1 bell pepper, any color, chopped
1 avocado, cubed
1 ear corn, grilled, kernels sliced off
1 organic chicken breast  OR 12 oz frozen shrimp
a few cilantro leaves to garnish

Make dressing first by combining all ingredients in a blender. Set aside.

Grill chicken or shrimp  over high heat, flipping only when you get a good sear on the first side. Slice chicken breast.

Add cabbage, peppers, corn, and avocado to a large bowl. Toss slaw with dressing. Add grilled chicken or shrimp over the top and sprinkle with extra cilantro to garnish.
