Rinse, remove stem and seeds from pepper, and slice into 2-inch rings. Heat skillet over medium heat and melt butter. Add pepper rings to the skillet and fry for 3 min.
Meanwhile, slice tomato into circles and place in the center of pepper rings. Season and fry for another 1-2 min. Carefully crack an egg into each of the pepper rings over the tomatoes. Season, and cook to desired doneness. |
